ISLAY RUM

This second batch in our experimental fermentation series brings together 5 separate distillation runs, combining short and long fermentation techniques. Our short 3-week ferments use commercial yeast with fresh dunder, while the longer 6-week ferments feature a mix of wild yeast, single-strain commercial yeast, mature dunder and local Islay bacteria. The result? A deeply complex, funk-rich overproof rum that balances intensity with precision. Slightly larger in volume than Batch One, but with no compromise on flavour.Launched in January 2022 at the Old Lemonade Factory in Port Ellen, Islay Rum is the island’s first rum distillery. Inspired by Caribbean methods, we use a custom pot still with twin retorts for a 'triple distillation' effect. Extended copper contact creates a smooth, handcrafted small-batch rum that brings something new to Islay’s rich distilling tradition.

Islay Rum Barrel Aged has been carefully rested in oak casks previously used for maturing heavily peated Islay Single Malt Scotch Whisky. The result is a rum with a delightful smoky flavour combined with notes of vanilla and a lovely coastal salinity.

Award winning Islay Rum Peat Spiced has a core of orange, ginger and cacao nibs amongst other top secret ingredients smoked over a peat fire. The result is an intensely smoky taste experience which we feel is a true reflection of its Islay roots.
